We are excited to offer the course being facilitated by Maxine from Peritia Training. This ITC course will be delivered over 1 day and is ideal for all those who are working with groups in the outdoors who wish to become occupationally competent in teaching and facilitating food preparation in cooking in an outdoor environment.
The qualification is intended to provide the learner with an understanding of the benefits of Outdoor Food Hygiene,
The qualification specifically, roles and responsibilities, how to prepare, cook, and manage others preparing and cooking food within the outdoor environment using approved principles and practices.
It is suitable for all who wish to become occupationally competent; need permissions or have an interest in teaching, and facilitating food preparation and cooking within the outdoor environment.
Topics include:
– The principles of food safety and of food hygiene
– Understand food contamination and controls in the outdoors
– Know how to store ingredients and cook food safely outdoors
– Special diets, dietary allergens, consideration when preparing and cooking food
The learning and assessment is a mix of theory and practical. Assessment is by completion of a paper portfolio and also by observation of practical skills.
Applicable to a wide range of outdoor cooking environments form camp kitchens to individual/group expedition/bushcraft/ activity camps/ corporate events.
There are 7 hours guided learning, 8 hours total qualification time. Successful completion of the award will be awarded an ITC Level 2 Award in Food Hygiene for the Outdoors
The course runs from 9am to 5pm and during this time the participants will learn the 4C’s of food hygiene in the outdoor environment: cleaning, cooking, chilling and cross-contamination prevention. Please arrive by 8.45 as there is a short walk from car park to woods. Finishing in woods at 5pm.
